I don’t really have a good place to post recipes; however, I got tired of emailing them to people, so I decided to start this page. I’ll use it to drop an occasional random recipe 🙂
Vegan Apple Crisp with Crumb Topping
Crumb Topping:
1 C. Flour
3/4 c. Brown sugar
1/2 c. Margarine
1 tsp. Cinnamon
Dash Ground Cloves
Dash Nutmeg
Combine all ingredients. Cut margarine into flour and brown sugar until the mixture is crumbly.
Apple Mixture:
5 Apples (peeled and chopped)
1 C. Sugar
1/4 c. Flour
1/2 tsp. Nutmeg
1/2 tsp. Cinnamon
Combine all apple mixture ingredients in an oven-safe casserole dish. Top with crumb topping. Preheat oven to 400 degrees. Cook uncovered for 15 minutes. Decrease heat to 350 degrees. Cook for an additional 40-45 minutes uncovered.
Note: You can thank my mom for this recipe. It is basically a modified version of her vegan dutch apple pie recipe without a pie crust on the bottom. For a non-vegan version, you can replace the soy margarine with butter.
